hot-spicy braised dish

first, to cook the main material (meat or chicken or shrimp) by searing it in little vegetable oil and then simmering it with the "kanshaw" sauce of which the main ingredient is the dried red pepper soaked and softened to soy-sauce, sugar and vegetable oil.

sze-chuan dish

this is a kind of sautéed dish (meat or chicken or shrimp) in "yu-hsiang" sauce. this sauce is prepared with a well-proportioned combination of garlic, ginger root and scallops. if the proportion is correct, and the cooking surrounding is right, it should bring out sort of sea-food flavor even without using seafood.

kung-pao dish

this is also sort of sautéed dish (meat, chicken, or shrimp) but in different sauce called "kung-pao" which was created by mr. kung-pao who was a real connoisseur in food from a rich family. the typical feature of this sauce is the first step of making: by dropping the dried red pepper in to hot-boiled vegetable oil to squeeze its flavor and essence out of the pods under the high temperature pressure in work while on fire. then the cook uses the said flavored oil to complete the rest steps of preparing. finally topped with peanuts.
