molasses is added to the cure to give a deeper sweet taste. we slow smoke the bacon for 3 hours over hickory and apple wood. we spice it up with dried chili peppers, sweet paprika and cumin. no shortcuts, no saline injections to rush the process and add weight or liquid smoke to emulate the real thing.
